A refreshing summer dinner option is easy because the chicken cooks really quick on the grill.
Light and refreshing flavors are great for hot evenings.
- 1 Lb chicken breast, halved
- 2 T butter, melted
- 1 T Dijon mustard
- 1 T Maple Syrup
- 10 radishes, sliced
- 2 Peaches, sliced
- 1 bag cole slaw mix (sub mixed greens)
- 1/4 C crushed walnuts (sub sliced almonds)
- 1 1/2 T Balsamic vinegar
- 1/2 t dijon mustard
- 1 t maple syrup
- 3 T olive oil
Make vinaigrette: Combine vinegar, mustard, maple syrup, and olive oil
Melt butter and mix in mustard and maple syrup
Divide butter mixture in 1/2.
Brush 1/2 of butter mixture on both sides of chicken. Add salt and pepper to taste.
Cook chicken on grill.
after cooked, drizzle remaining 1/2 of butter mix on top.
toss slaw mix, radishes, peaches, walnuts, and vinaigrette together. (if making as a salad skip this step)
