Dijon Chicken and Peach Radish salad


  • 1 Lb chicken breast, halved
  • 2 T butter, melted
  • 1 T Dijon mustard
  • 1 T Maple Syrup
  • 10 radishes, sliced
  • 2 Peaches, sliced
  • 1 bag cole slaw mix (sub mixed greens)
  • 1/4 C crushed walnuts (sub sliced almonds)
  • Vinaigrette:
  • 1 1/2 T Balsamic vinegar
  • 1/2 t dijon mustard
  • 1 t maple syrup
  • 3 T olive oil


Heat grill

Make vinaigrette: Combine vinegar, mustard, maple syrup, and olive oil

Melt butter and mix in mustard and maple syrup

Divide butter mixture in 1/2.

Brush 1/2 of butter mixture on both sides of chicken. Add salt and pepper to taste.

Cook chicken on grill.

after cooked, drizzle remaining 1/2 of butter mix on top.

toss slaw mix, radishes, peaches, walnuts, and vinaigrette together. (if making as a salad skip this step)
