Did you know avocado toast dates back to 1920? I didn’t until I was researching it for this recipe! Avocados, sweet potatoes, and salmon are my 3 favorite dinner foods and this recipe combines all of them into a delightfully delicious summer dish. I was late to jump on the everything bagel seasoning train and am wishing I would have dove in sooner because it is a scrum-didily-umptios and easy way to add flavor. Do you eat avocado toast for breakfast or dinner?
- 1 lb sweet potatoes, sliced
- 1 lb salmon
- 2 t everything bagel seasoning
- 2 avocados, mashed
- 2 t lemon juice
- Opt. 2t hot sauce
- 5 oz Arugula
- 1 clove shallot, sliced
- 2 T parsley
- 2 C cherry tomatoes, halved
- 1 T balsamic vinegar
- 2 t olive oil
start cooking sweet potatoes on the grill with olive oil and salt to taste.
mix together avocados, lemon juice, and hot sauce of choice
Sprinkle everything bagel seasoning on salmon and add to grill. Flip sweet potatoes.
Mix together tomatoes, shallots, parsley, balsamic vinegar, and olive oil in a medium bowl.
Once salmon and sweet potatoes are cooked, layer everything just like avocado toast. (sweet potato, avocado mixture, salmon, top with arugula, and tomato salad on the side.)
