Did you know you can make any squash into a boat style dish? And you can stuff them pretty much any way you can think! These lasagna zucchini boats are not only delicious, they are filling too.

This recipe can be made with any sort of squash as well! Zucchini, yellow squash, acorn squash, ect.

Prep Time: 3 minutes

Cook Time: 36 minutes

Total Time: 48 minutes

  • 2 squash
  • 1 lb ground meat (i.e. turkey, beef, ect)
  • 1/2 C ricotta cheese
  • 1 large egg
  • 1 T parsley
  • 3/4 C Mozzarella cheese + topping
  • 1/4 C Parmesan cheese
  • 1 C crushed tomatoes
  • 2 cloves garlic (1 T preminced)
  • 1 T basil
  • 1 T oregano
  • 1 T parsley


Preheat the oven to 400 degrees

Slice squash long ways

and scoop out centers

In a pan over medium heat, cook meat

In a small bowl combine ricotta cheese, egg, parsley, Mozzarella, Parmesan

In a large bowl combine: tomatoes, garlic, basil, oregano, parsley

Add in meat and stir to coat

Inside of squash halves, evenly distribute cheese mixture followed by meat mixture.

Top with: mozzarella cheese

Cover with foil and bake for 30 minutes
