My quick cooker is my most used appliance (okay, maybe tied with my espresso machine)

I love using it because it makes dinner a breeze especially when I prep everything ahead into ziplock bag(s) to make it a dump and cook meal.

Ahhh now doesn’t that sound relaxing? In the very least, productive.

This recipe I curated because I had run out of oranges for orange chicken, but I  had 2 mangos about to go bad. (That’s how most of my recipes are born actually)

Insta Pot Mango Chicken

Prep Time: 8 minutes

Insta Pot Mango Chicken

Ingredients

  • 1 T sesame Oil
  • 1.5 lb chicken breast, cubed
  • 1/4 C onion, diced
  • 2 green peppers, sliced
  • 1 C broccoli florets
  • 1 clove garlic (1 t preminced)
  • .5" ginger (2 t spice)
  • 1 C water
  • 2T honey
  • 2 t vinegar, rice
  • 1 T soy sauce
  • 1/4 t chilli flakes
  • 1/4 t papper
  • 1 C mango
  • 1 T cornstarch
  • 1 C rice

Instructions

Sear chicken in sesame oil in insta pot

mix all ingredients together, cover, and set for 15 minutes.
