This rice bowl is a take on an egg roll.
Super easy to cater to limitations (for example I omit any egg products) can be paleo, whole 30, keto, ect. Rice not needed I would just up the quantities of everything else to have enough food 😘

Egg Roll Rice Bowl

Ingredients

  • Cooked rice (quinoa, brown, mixture, ect)
  • 1 small red onion, diced
  • 3 green onions, sliced
  • 1 T minced garlic
  • 1 Lb ground turkey
  • (Can also add in eggs, beaten)
  • 1 T Sirracha
  • 1/2 T fresh ground ginger
  • 1 8oz can of sliced water chestnuts
  • 1 t salt
  • 1 t white pepper
  • 1 bag coleslaw mix
  • 3T coconut aminos
  • 1 1/2 T rice vinegar
  • 1 T sesame oil
  • Sauce:
  • 1/4 C vegan mayo (or mashed avacado)
  • 1 1/2 T Sirracha (give or take)
  • 2 t ginger
  • sesame seeds (to top)

Instructions

Cook meat and/or eggs

Mix together sauce ingredients

Layer everything as desired
