This super easy and quick dinner is delicious and filling. Not to mention, toddler approved š
Ingredients
- 1 1/2 cups rice
- 1/2 cups quinoa
- 2 1/2 cups water
- Juice from one lime
- 2 16oz cans of black beans
- 16oz can of corn
- 2 tomatoes, diced
- onion, diced
- Seasonings: I use a blend I make for any taco type dish
- Toppings: avacado, Greek yogurt (sour cream), shredded cheese, ect
*pro tip:
- you can also sneak in shredded zucchini for picky veggie eaters but take out 1/2 cups water
- You can also use half coconut milk for the water
Directions
Put it all in the quick cooker in order. Do not mix and set to brown rice
Once done, mix and serve with whatever toppings you like!
